Kaju Katli, also known as Kaju Barfi, is a popular Indian sweet made from cashews, sugar, and ghee. Its origins are believed to trace back to the royal kitchens of the Mughal era. This delectable sweet is associated with the Indian subcontinent, and there isn't a specific state attributed to its creation. However, it has become a cherished part of Indian sweets and is enjoyed across the country, especially during festivals and celebrations.




To make Kaju Katli, you'll need the following ingredients:


Ingredients


2 cups cashews (kaju), finely powdered


1 cup sugar


1/2 cup water


2 tablespoons ghee (clarified butter)


1/2 teaspoon cardamom powder


Edible silver foil (optional, for decoration)




Method to make Sweets :





Grind the cashews into a fine powder using a food processor or grinder.



In a non-stick pan, combine sugar and water over medium heat to make a sugar syrup. Stir until the sugar dissolves completely.



Add the cashew powder to the sugar syrup and stir continuously to avoid lumps.



Add clarified butter to the mixture and continue stirring. Cook on low heat until the mixture thickens and starts leaving the sides of the pan.



Add cardamom powder for flavor and mix well.



Enjoy your homemade Kaju Katli!



Remove the mixture from the heat and let it cool slightly.



Knead the warm mixture into a smooth dough on a greased surface.



Roll out the dough into a thin, even layer using a rolling pin.




Cut the rolled dough into diamond-shaped or square pieces.


Allow the Kaju Katli to cool completely before serving. Optionally, decorate with edible silver foil.
