Ingredients:


10 cups of water or chicken broth


1 stalk of lemongrass, sliced into 2-inch pieces and bruised


3-4 kaffir lime leaves, torn


3-4 slices of galangal (or ginger if unavailable)


2-3 Thai bird's eye chili peppers, sliced (adjust according to spice preference)


200g (7 oz) of shrimp, peeled and deveined


200g (7 oz) of mushrooms (straw mushrooms or oyster mushrooms work well)


2 tomatoes, cut into wedges


1 onion, sliced


2 tablespoons of fish sauce (adjust to taste)


3 tablespoons of lime juice (adjust to taste)


Fresh cilantro leaves for garnish


1 tablespoon of sugar (optional)


Instructions:


In a large pot, bring the water or chicken broth to a boil.


Add the lemongrass, kaffir lime leaves, galangal, and Thai bird's eye chili peppers to the pot. Let them simmer for about 5 minutes to infuse the broth with flavors.


Add the shrimp to the pot and cook until they turn pink, about 2-3 minutes.


Stir in the mushrooms, tomatoes, and onion. Let them cook for another 2-3 minutes until the vegetables are tender.


Season the soup with fish sauce, lime juice, and sugar (if using). Adjust the seasoning according to your taste preferences, adding more fish sauce for saltiness, lime juice for sourness, or sugar to balance the flavors.
