Ingredients
2 cups of poha (flattened rice)
1 large onion, finely chopped
1-2 green chilies, chopped
1/4 cup of roasted peanuts
1 teaspoon mustard seeds
A pinch of asafoetida (hing)
Curry leaves
Turmeric powder
Salt to taste
Fresh coriander leaves for garnish
Lemon for serving
Instructions
Rinse the poha under running water and set it aside to soften.
Heat oil in a pan and add mustard seeds, cumin seeds, hing, and curry leaves.
Add chopped onions and green chilies, sauté until the onions are translucent.
Cook for a few minutes.
Add turmeric powder and salt to the mixture.
Mix in the softened poha and gently toss everything together.
Add roasted peanuts and mix well.
Garnish with fresh coriander leaves.
Serve hot with lemon wedges.
